Being 1/4 Irish, this was the year to finally prepare a true corned beef and cabbage supper for my family. It was weird to boil meat, but I think it turned out okay. There were only a couple of slices left, while quite a bit of the cabbage was dumped in the trash (what would you do with leftover cooked cabbage???).My Grandpa Bill who passed away in November was 100% Irish and very proudly so. I think he's have been pleased we finally enjoyed a homemade Irish dinner. Thanks for the tips, Mom! Maybe next year the boys will even wear green....
